The plant can reach a height of 12-18 inches (30-45 cm). The rhizome, which is the most valued part, is thick, knobby, and typically green.
Flavor: The rhizome is known for its pungent, spicy flavor, distinct from common horseradish.
Planting Instructions
1. Choosing the Right Location
Climate:
Optimal Temperature: Wasabi thrives in cool conditions, with ideal temperatures between 45°F and 75°F (7°C to 24°C). It does not tolerate extreme heat, frost, or direct sunlight well.
Shade Requirements: Wasabi prefers partial to full shade. In natural settings, it grows under the canopy of trees or along shaded riverbanks.
Soil:
Type: Wasabi requires rich, well-draining soil. Sandy or loamy soils enriched with organic matter are ideal.
pH: The optimal soil pH is between 6 and 7.
2. Preparing the Planting Site
Shading:
Natural Shade: Choose a location with natural shade, such as under trees.
Artificial Shade: If natural shade is unavailable, use shade cloth to create a shaded environment.
Soil Preparation:
Depth: Work the soil to a depth of 12-18 inches (30-45 cm).
Amendments: Incorporate compost or well-rotted manure to improve soil fertility and drainage.
3. Planting Wasabi
Timing:
Season: Plant wasabi in early spring or fall when temperatures are moderate.
Spacing:
Distance: Space the plants 12-18 inches (30-45 cm) apart to allow for adequate air circulation and growth.
Planting:
Hole Preparation: Dig a hole slightly larger than the root ball of the wasabi plant.
Plant Placement: Place the plant in the hole, ensuring the crown (where the stem meets the roots) is level with the soil surface.
Backfilling: Backfill the hole with soil and gently firm it around the plant.
4. Watering
Consistency: Wasabi requires consistently moist soil. Water regularly to maintain even moisture but avoid waterlogging.
Irrigation Method: Drip irrigation or a soaker hose can provide steady moisture.
5. Mulching
Mulch Type: Apply a 2-3 inch (5-7 cm) layer of organic mulch, such as straw or wood chips.
Purpose: Mulch helps retain moisture and regulate soil temperature.
6. Fertilizing
Fertilizer Type: Use a balanced, slow-release fertilizer or a liquid fertilizer diluted to half strength.
Frequency: Fertilize every 4-6 weeks during the growing season.
Caution: Avoid over-fertilizing, which can harm the plant.
7. Pest and Disease Management
Pests: Monitor for pests such as slugs, snails, and aphids. Use organic pest control methods such as neem oil, insecticidal soap, or handpicking pests.
Diseases: Ensure good air circulation to prevent fungal diseases. If necessary, apply fungicides labeled for use on edible plants.
8. Harvesting
Maturity Time: Wasabi plants typically take 18-24 months to mature.
Harvesting Method: Harvest the rhizomes when they reach 6-8 inches (15-20 cm) in length. Carefully dig around the base of the plant to lift the rhizome without damaging it.
Edible Parts: The leaves and stems are also edible and can be harvested as needed.
9. Storing and Using Wasabi
Storage: Freshly harvested wasabi rhizomes should be cleaned and stored in the refrigerator wrapped in a damp cloth.
Usage: Grate the rhizome as needed for the best flavor. Fresh wasabi is much more pungent and flavorful than the commonly available wasabi paste made from horseradish and mustard.
Additional Tips
Container Growing: Consider growing wasabi in containers if your climate is not suitable. Containers allow for better control over growing conditions.
Hydroponics: Wasabi can also be grown hydroponically in a shaded greenhouse for optimal control over temperature and moisture.
